Preparation Instructions:
BATTERED DEEP FRYING:
For best results heat oil to 350°F-375°F. Mix 1 part Batter Mix to 1 part water. Less water will give a slightly thicker product. Caution: Too thick a batter will not cook through. Dip serving-size pieces in the batter. Place in hot oil. Allow to fry until batter is golden, turn to finish for one to two additional minutes. (Make sure ice crystals are off portions before dipping in batter).
PAN FRYING:
Moisten product to be fried with water. Roll in dry Batter Mix until coated. Place coated product in pan containing enough oil to cover bottom of pan. Fry till golden, turn, repeat. Cover and allow to complete cooking.
OVEN BAKING:
Prepare as for pan frying. Allow portion to sit for 5-10 minutes before baking. Place in greased baking pan. Bake without turning until product is golden brown.

5 lbs of mix will yield approximately 75 servings
